Well into our 30 days to Feeling Fit program, you might be looking for inspiration for wheat free bread recipes.
Try this easy Paleo Bread recipe:
Paleo Bread is made with grain - free flours and can be enjoyed with both savory and sweet toppings. This recipe is for a 7"x3" loaf pan. If you have not eaten Paleo Bread before you might be a little surprised by the taste of eggs at first, since the recipe calls for 5 eggs, but trust me, this bread gets better and better each day. Keep it refrigerated and toss it in the toaster for a warm taste-bud adventure.
Ingredients:
2 cups of blanched almond flour
1/4 cup golden flax meal
2 tablespoon coconut flour
1/2 teaspoon baking soda
1/4 teaspoon of sea salt
5 large eggs
1 tablespoon coconut oil (room temperature, liquid form)
1 tablespoon of honey
1 tablespoon apple cider vinegar
Preheat the oven to 350 Degrees. Grease a 7" by 3" loaf pan with coconut oil. In a food processor or mixing bowl, pulse together the almond flour, flax meal, coconut four, baking soda and salt. Add the eggs, coconut oil, honey and vinegar and pulse until thoroughly combined. Scoop the batter into the prepared loaf pan and bake for 35-45 min. Make sure to not over-bake it, so it does not dry out. Test the bread by inserting a knife into the center o the loaf and should come out clean. The the bread cool in the pan for 1 hour and then serve. (recipe by Elana's Pantry).
Quick tip, make it the first time without your kids help, but then make it again and again by letting them help you through the process, the bread taste much better, the more love it received through the process of making and baking!
