Chocolate Banana-Apple Protein Muffins

It is already 10:30 pm and I am making muffins, but these are extra special and I don't have any guilty feeling eating them at this hour...well, they are for tomorrow, for some very special guests, but of course I needed to make sure they turned out alright.

What is so special about these muffins?

Well, they are dairy and gluten free, but have fresh fruits like graded apples, bananas, and lots of vegan proteins, vitamins and minerals!

Recipe:

Chocolate Banana-Apple-Chocolate Protein Muffins

Yield: Makes 12 muffins

Ingredients

  • 4 scoops chocolate protein powder (I used Arbonne, its gluten free (GF), dairy free, vegan, and it's one of my favorite products from their nutritional line)

  • 1 cup GF oats

  • 1/2 cup chocolate chips (use dairy free if you want 100% diary free muffins)

  • 4 tbsp coconut sugar (use your preference)

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 4 egg whites

  • 2 bananas (the riper the better)

  • 1 cup applesauce or (4 small apples finely graded, keep the consistency moist, but not overly juicy)

  • 4 tbsp almond milk

Instructions:

  • Preheat oven to 350 degrees.

  • In a large bowl, whisk together the protein powder, oats, coconut sugar, baking powder and baking soda.

  • In a smaller bowl, mash the banana. Start mixing your egg whites in your mixer of choice, I love my Kitchen Aid mixer. Ad bananas, applesauce and milk and whisk it all together.

  • Ad the dry ingredients to the wet ingredients into the blow and continue mixing it all until well incorporated.

  • Spray liners with cooking spray and line the muffin pan. Fill the liners 3/4 of the way full. Bake for 25-30 minutes, or until when you can stick a butter knife in the center and it comes out clean.

You can also bake them like brownies. Both are amazing!
